If there are multiple values, which separator do I use?

Hi Joris

Mkgmap ignores tags in the OSM source that are not referenced by style rules or are needed by explicit code.

You can add to the list of tags read by adding line to style/options,
eg:
...
extra-used-tags=direction
...
